Their economy is growing so fast that it will take over America in terms of industrial power (only challenge to this would be India who is also developing quickly). So yes, many different countries speak english but in terms of which is the most 'universal' and 'most spoken' it's Chinese. Unless you're blind to the future, you should check your reasoning.

Pretty good mate, but there were few things I would change
1. Don't garlic everything when you do Chinese cooking
(say dumpling for an example, it ruins the filing.)
2. Try to make your own dumpling skin instead of buy-in's.
3. Use soup(maybe you can make a bit more that soup you freeze for filing) while you steading it.
