it's not "crepe" but bretonne "galette". the difference with crepe it's not dessert but salt recipe. it's simply crepe with buckwheat flour instead classic flour, salt instead sugar, and water instead milk...
i used a cast iron pan upside down so i had a perfectly flat cooking surface to slide the spatula under to loosen them. i looked at the price of these cast iron crepe makers that they use in catering and they were to much for the home. some of them use 6 or 8 kw of electric.
let me tell you something fellas, as a french man. these are legit french crêpes. these are salty ones (hence the fact that they're brown and a bit burnt), you have to make them very thin, and crispy. we ad some typical fillings: ham, goat cheese (awesome), salad, grated cheese, and of course an egg.
our sweet crêpes (filled with Nutella, chocolate spread) are golden, thick and fluffy, we don't cook them for such a long time. i even think we're not using the same ingredients for the batter.

Whenever the cook's whole reputation and livelihood rides on the tastiness of his food, you can be sure it's good. His food is field tested daily.
It really depends on how your customers like it... whether made to order or how he prefers to make 'em. If they keep coming back or simply that they love it darker, who cares...it's their preference. Thibau is right... always depends how hot the pan is. But I would kill to have that consistency... I make crepes and they do not even come close. So his is prolly cooked at a lower temperature. If it were rubbery, it would not fold easily and it will break apart easier as he makes the fold.
@Matrix5060 I initially thought that the one crepe was probably burning too, but he must have been using a lower heat than what we probably assumed; it certainly didn't look burned once he folded it over.

The reason why the crêpe is brown is because it's more of a galette, which is made from buckwheat flour. It's not brown because it burned..

In France, wheat flour or buckwheat flour is typically used for crêpes. It's a darker flour.

If it were rubbery, it would not fold easily and it will break apart easier as he makes the fold.

@Matrix5060 I initially thought that the one crepe was probably burning too, but he must have been using a lower heat than what we probably assumed; it certainly didn't look burned once he folded it over.

@Matrix5060 no you can keep it for 1 min each side but im sure his temp was low....i cook them sometimes at that temp when the customers at the restaurant i workk at like it crispy
