I really think the frozen vegetables will work out even if they get a little watery because IF your heat on your pan is hot enough, the water will evaporate and you have a delicious meal.

Oyster sauce is not fishy tasting, if you are worried about that.
You could sub 'hoisin' sauce, you would have a different taste than mine, it would work.
