I de-bone all my meat, and then I remove the silver skin. I also use a "Presidents Choice steak marinade" for a full day with a couple of onions to help remove the gamey taste. I then put it on the charcoal BBQ and cook low and slow. I also use a Beer and Chipotle BBQ sauce near the end. Most times you would never know your eating venison. Try using some flavoured wood chips as well in your BBQ also. Good eating!
@SpreadingTruths A gamey taste is the natural flavor of the meat..Each meat is gamy in a different way...Like a gamy fish is very fishy, A goat is gamy because it smells like goat (very unique and I love it but a lot of people dont), A lamb is little less gamier than goat but has its own unique smell, Beef is also gamy but has a beefy flavor which we all like (that's why we don't call it gamy) A deer is gamy as it has a natural earthy/grassy flavor. A meat without no flavor is what is not gamy
Respond to this video... The gaminess is nothing but a psychological interpretation. Each animal be it deer, goat, cow, pig has its own unique smell. The stronger the smell the better it tastes provided you LIKE that taste. A beefier tasting beef tastes better than a flat tasting beef. Thats why we add beef broth to beef stew or chicken broth to chicken stew because we like those flavors. Same goes with fish where Asians add fish sauce because fish flavor is desireable
Respond to this video...The reason we call deer gamy is because deer is very few people's staple diet and we are not used to the natural flavors of deer. We seldom eat deer compared to other meat. I love goat, lamb, wild boars wild turkeys as I grew up eating those. The more goat flavor the better. I eat liver kidneys, brain tendons and even guts But even after that I find deer gamy because I am not used to its flavor.
Respond to this video... Getting rid of the gaminess of a deer is like avoiding the problem instead of fixing it. I say don't drain the blood, dont remove the tendon, keep the bone and bone marrow , keep some fat (I understand the tallow is very greasy but still keep a little)...Eat it all natural...The deer flavor will shine...Dont hide it under the carpet..Face it like a man...Puke two or three times if required..Next time you eat deer you will not throw away the fat, tendon and bone
Hi from Alberta, Canada. Great video. I just started hunting this year and experimenting cooking up the deer from this fall. I've been doing a variant of your technique, but will give yours a try. I still get a bit of a gamey taste. What do you suggest for hamburger?
Deer burger... if using in in a sauce, chili, or something like that, I typically boil it until brown or good and cooked. The aroma is not pleasant, so I do it outside. Once boiled, strain it out an rinse in hot water. This will get the majority of it out. If making a deer hamburger, I can't help you there. Still haven't found a good way yet. Also try doing some venison shishkabobs. Smaller chunks of meat that have been in a marinade, tend to taste much less gamey as well.

What is gamey taste like? Is it similar to the fishy taste from fish? Is it from the omega 3 fatty acids? That stuff is good for you.
