Question...... Would you happen to know how many calories this is? I'm really wanting to try and eat more greens, I'm a carnivore to the fullest, but I want change. Even a questimate would be fine since you've put this recipe together. Thanks a lot
That looks very yummy! I would def add some corn and green chillies to the mix. :) Thankyou for the video! I always use canned beans, but I think after watching this I would start using raw ones. Cheaper and healthier.

It came out good!! However, I had problems folding the ezekiel's tortillas.. I ended throwing 3 tortillas in the trash because it got ruined... why? =|
Is it because it was a bit frozen and I had to wait a little longer ?
@thugricanz ah, yes, ezekiel's are very stiff, I never have much luck with them. I use a brand of sprouted wraps called Alvorado St, they are much easier to bend than Ezekiel's. Yours could have been a bit frozen still, but they tend to crack no matter what I do... I usually just make them work as best I can, even if they crack ;)

Next time I will add less seasoning because I don't like it very spicy since i am not used to it. Despite of that, I loved it! My brother loved it too.
Hello Heather! I've decided to try a new recipe from you!! Despite being busy and all, I want to try more of your recipes. I will let you know it goes.. I saw organic black eyed peas from eden which has kombu instead of salt.. so I am trying this out today
Trying this today!! I bought black eyed peas from Eden. No salt.. I see kombu (seaweed) which is a good thing because you mentioned it. I will let you know how it went. ^_^: thanks!
@ladya123 I use olive oil - much less processed and refined than canola, which I never buy. Hope you enjoy! It's really good with some diced tomatoes (fresh or canned) poured on top to get it really moist :)
@rudyschalk Salt is good for softening the vegetables, reducing the bitterness of them, helping the flavors to enter the beans, and bringing the flavors of the dish together. I find it really helps in making a vegan dish tasty and appetizing, especially for those who are used to processed foods and/or meat. Used in moderation, and in balance with lots of potassium-rich veggies it is fine for most people. Eliminating processed foods is a really good way to cut a huge source of sodium.
@healthyvegan be careful you can get atherosclerosis from high sodium not just cholesterol , my Dr has met a japeneze couple who had clogged arteries in the neck due to high sodium.
@dillpickleboocutie I like to add the onions and garlic first because of their wonderful flavors. Putting them in the pan first allows their flavors to develop the longest, and coat the zucchini. They brown quickly on their own, but you'll notice that when you add the zucchini and the other vegetables, they take up some of the heat and things cook pretty evenly from there on.
I made these tonight and will definitely be making them again, but might use sweet onions instead of red next time and possibly add a little lime juice. Thanks for another great recipe.

They brown quickly on their own, but you'll notice that when you add the zucchini and the other vegetables, they take up some of the heat and things cook pretty evenly from there on.
