I really appreciate the healthy, nutritious recipes you provide. I work in the food service industry, and it amazes me to witness countless adults (who should know better)eliminate all vegetables from their entrees. ' No mushroom, tomato, peas, and asparagus- substitute extra sauce and pasta.' It makes me want to smack 'em in the forehead and say, ' You coulda had a V8.'
