I've been a Clam Farmer for 17 years.

You do NOT put 1400 in a bag, you WILL kill 75% of them stocking them at that density.

You do NOT use chicken wire, it rusts and turns into needles which will stab you through the thickest gloves you can buy.

and you MUST check the bags after they have come of the grader, or you WILL have two to three mudders* in them.

*Clam shells which are held shut by mud stuck inside, look just like live clams until you ruin a whole batch when trying to cook them.

I have been eating clams my whole life, but mostly raw.

The clams from cedar key are GREAT steamed or in a dish.

However, they just do not have that wonderful Briney taste from a cold water clam.
