  • I'd love to cook ds soon...just one thing, though...isn't that like a whole lot of saunf and dhania seeds for just a few drumsticks of chicken?or are you flavoring the stock too intensely, so the rice gets flavored too? can i use less?

  • Flavoring the stock so that the rice gets flavored. You would through away the stuff in the cheese cloth.

  • the spices that you used to pressure cook the chicken what else can i wrap that in? I dont have a cheese cloth? I LOVE your recipes you make them so simple! I'm an American *white* and my husband is Pakistani so I watched your videos and learned to cook things and used another website as well and he LOVES the food and the fact that I'm cooking his cultured food!

  • You can use any thin cloth. The idea here is to get the juices out of the spices.

  • How did it become yellow?did you add colouring or saffron?

  • No - I did not add any coloring. It was mainly due to onions.

  • If I wanted to make double the amount of everything, I'd use double the amount of chicken, one bulb or garlic, a whole onion, etc... but how much additional spice would I add to the bouquet?

  • Use 11/2 time the spices that I showed, that should give additional flavor needed for the extra chicken and rice.

  • I've never seen it listed in any pc manual, but I've made juice using my pressure cooker. I made passion fruit juice by blasting the pulp and seeds for 15 mins and letting it cool naturally. The regular way involves pouring boiling water onto the pulp but I find the pc extracts more of the passion fruit flavour. Even though it tastes delicious, do you think 15 mins is too long for the fruit?

  • That Brillo works like magic. When I just started using my pressure cooker with simple non messy dishes, I cleaned it right away. After I did a fried chicken recipe, I drained the residue and let the pot soak in some dishwashing liquid overnight and cleanup was a breeze. Do you clean your pc asap? Any tips on pasta? I am going to experiment with a pot in pc macaroni pie dish.

  • Great - spread the word. Yes I do try to clean my PC ASAP. As you have pointed out I usually empty the PC or any other pot right away and soak it in hot water. Usually all my pots and PC go in the dish washer. And once in a while I would use Brillo to clean the spots that you refer to.

  • I've Christened my pressure cooker with some of your recipes like the dhaal. It was the smoothest and tastiest I ever made using a pc for the first time.Thanks! After some more meat dishes I'm getting some brown marks on the sides of the base. I notice in kitchens with pots that get heavy use this happens a lot. How do you remove these brown marks from the inside of the pot?

  • Not sure where you are but in the US you can find something known as Brillo at any super market chain. That does the trick. You will also notice if you put your pressure cooker in dish washer it loses color. Brillo works well on both steel and aluminium.

  • hi sheba, can u pls tell me the proportion of broth to the rice-as in how many cups of broth should we have for 3-4 cups of rice and how much chicken also...thanx

  • If you go to 4.49 you will get an indication of how much broth you need. As you will be cooking in pressure cooker you do not need too much just enought that the rice and chicken are fully covered. I would suggest try cooking with 1 cup for rice first. 3 to 4 cups will be a lot as a start.

  • How many pressure cookers do you have? I'm seeing the Hawkins type aircraft lid closing one and other types in your videos. We have a variation of a chicken/rice/pigeon peas dish we call pelau in the Caribbean. How long to cook a dish with those three ingredients together in a pressure cooker? I still haven't broken out my pressure cooker from its box yet. Can't wait to start doing and cooking.

  • I have mnay - lost count.

    Cook for 5 minutes after pressure builds and let it cook on medium heat. Do not open the pressure cooker and allow the pressure to release itself. After the pressure has been released open the cooker when safe and check.

    As to your other question about rice - I cook all my rice in pressure cooker and get perfect rice all the time. You can watch Rice cooked in 5 minutes or Chicken Pulau recipe. I will be posting some more rice recipes soon.

  • thanks a lot for sharing this yummy dish..i want to try this as soon as possible but i have one question..how much water will be needed for the whole prepartion?will it depend on chicken quantity or rice quantity?sorry for bothering u bcoz sometimes i found that my any rice preparation was completely spoiled only due to water amount...so plzz help me..

  • You are absolutely right. It depends on rice and chicken and sometimes rice dishes do not come out as well due to extra water.

    I used a cup of water for 1 cup of rice. Hope that this helps.

  • Yes - you can cook in ordinary pot. It will take longer, most probably it will take 25 to 30 minutes for the chicken. After that you will have to cook for another 15 to 20 minutes for the rice to cook. A lot would depend upon the rice and the time you soak it.

  • I made this tonight for my family. Delicous!! We ate every last bit. Thanks Sheba. My cooking will get a LOT better now thianks to your videos. I plan to try more recipes. Please keep up the great work. One question, if you were to make this for a large crowd, would you simply double or triple the recipe or would that be too much spices for the broth?

  • I would suggest that for two cups of rice you can still leave one bulb of garlic, put one full onion and for other spices do 1 1/2 times the recipe instead of doubling it.

    For triple still stay with one full bulb, one full onion and twice the recipe with salt to taste.

  • Hi there, I tried this recipe out and it came very well. The pulav was very tasty and the masala just right. I found the process very simple. I had stopped cooking in the pressure cooker for a long time and it was good to get back to using it again. The chicken was very tender. Thank you for sharing the recipe.   • Hi Didi, How long do u cook the chicken to make the broth before we shut off the heat and ho long do we leave it with the heat off to cook inside. Also how long do we cook it once we add the rice before we shut off the heat, and how long do we keep it colses with the heat shut off.

  • For broth when you hear the first whistle turn off the heat and leave it with the heat off till the pressure releases by itself. That may take almost 8 to 10 minutes. You should be able to open the cooker without any extra effort.

    After you add rice and hear the first whistle, turn the heat to medium and cook for 5 minutes. Turn off the heat and let the pressure release itself. It will take another 8 to 10 minutes. Hope that this helps.
