The black and white signifies the past, and the color the present. It shows that Noah lost Allie in the past and is loosing her all over again in the present. It's not what happens in the actual movie, just this music video. Rewatch it knowing that the black and white is the past and it'll make sense. I usually used the color in parts where the lyrics suggested moving on for both of them.
