@danxl5 they make the top half of chocolate and then cool it, then pour in the molten caramel. Then they freeze it and add the Last layer of chocolate, Cool it, and then trim it
You should be able to extract the rose color (which should be relatively water soluble) and change the color from red to blue by changing the pH of the solution.
I've done it with raspberry juice though I haven't tried it with roses.

Unless it's an art project people shouldn't be noticing what the camera is doing, sorry I can't help myself.
