  • What is the skill if you use a non-stick pan?

  • I use a reasonably priced extra virgin olive oil for most cooking, however, olive oil and canola oil are also good choices.

  • This is very nice advice, all in all. I would suggest, however, if you're going to do that simple sauce, use a little white wine and capers as well. It really isn't any harder, and really adds to it.
