I doubt the quick shake of the iphone is what ends the app; that would mean you could only do the trick EXACTLY as he did. Tricks like this are supposed to be somewhat flexible; you can probably change settings on the app to determine what ends it.

When he touches the screen, a coin appears and will roll around. When he shakes it, the coin disappears. I also think he never put the coin in his other hand. It looks like he's holding it between his fingers the whole time. Notice how he keeps his fingers together tightly.
Like all similar tricks, you have to have good hands for this to work. I keep watching that left hand over and over again, and I just don't see when he hid the last coin.

He uses a french drop and the application does not work like that. the coin is tilt cenceored but shaking it does not do anything.
