Alternative: Brown the meat in the dutch oven, take out when brown. Put the onion with tomato paste etc. The coconut milk and chicken stock will deglaze the bottom of the pot. Put the meat back in. The difference is the "goodies" from the meat. Cauliflower Puree instead of florets of the cauliflower as a base of the meat and sauce makes it look more "sophisticated"
at trader joe's they have this chili spiced mangoes...it had cayenne in the ingredient label and i said to myself, this needs to have chef john's seal of approval.

NEVER let the coconut milk boiled up to the point that air bubbles come out from the surface, always stir continuously to prevent the coconut milk from overheating, Otherwise, the coconut milk will be ruined and you can't store the curry.
