  • You probably should have left the bone in, when it is cooked that well most people like to suck the juice out of them... so delicious. At least I know people from the caribbean like to.

  • I use up all my coconut milk in making pulut hitam, a kind of malay/indonesian/pernakan (I'm not sure) dessert. Chef John, can you do pulut hitam, please?

  • @metrolead Possibly broccoli, or just some mushrooms. You couuld also substitute zucchini. I don't know, those are just a couple suggestions.

  • @metrolead no cauliflower... i doubt it would subtract from the taste if you didn't have it, seeing that cauliflower is almost tasteless.

    In America the leaf coriander plant is called cilantro, which is strange as the seed is called coriander seed, which you can buy ground or as 'seed'..

    I use supermarket, fresh leaf coriander.

    As in Indian cooking .

    Or grow my own from the coriander seeds.

  • Stewing meat and Curry are my two favorite things to cook. I made this last night and turned out better than I imagined. However, The butcher i went to didn't have any short ribs left so I used beef shanks and oxtails. I dont know how much different they are then short ribs but they were awesome. I also used the leftovers and tossed it with some gnocchi I had in the freezer today. Might have been even better.

  • you skim the oil? most 'authentic' places won't skim it. it looks and tastes better w/o the skimming. i know its super unhealthy, but that's how we indians do.

  • Did you strain out the onions/whole cloves of garlic, or just try to avoid those while serving?

  • Alternative: Brown the meat in the dutch oven, take out when brown. Put the onion with tomato paste etc. The coconut milk and chicken stock will deglaze the bottom of the pot. Put the meat back in. The difference is the "goodies" from the meat. Cauliflower Puree instead of florets of the cauliflower as a base of the meat and sauce makes it look more "sophisticated"

  • NEVER let the coconut milk boiled up to the point that air bubbles come out from the surface, always stir continuously to prevent the coconut milk from overheating, Otherwise, the coconut milk will be ruined and you can't store the curry.
