This looks sooooo good! One difference I make is that I tend to separate the skin from the flesh and slip a few cloves of garlic and some herbs underneath the skin. I always make sure to get some at the thigh joint. Sometimes I put some margarine under there too. I always throw some stuff in the cavity too, like some onions and carrots.

that looked wonderful....great....ever thought about using white sugar mixed with your rub?....it will create a shell and keep the meat super juicy.....and the skin wonderfully crispy...your vids are always great..thanks
