  • This looks sooooo good! One difference I make is that I tend to separate the skin from the flesh and slip a few cloves of garlic and some herbs underneath the skin. I always make sure to get some at the thigh joint. Sometimes I put some margarine under there too. I always throw some stuff in the cavity too, like some onions and carrots.

    Hey...just like my meatloaf, there are sooooooo many great ways to roast a chicken. Yours is just one of the many. Great job.
