French secret to great food= Nothing processed. The meats are slaughtered the same day. The only meat that is kept longer than a day are the smoked meats such as sausage or ham and the pastries are made fresh with no chemicals added. Basically here in the U.S we have big chain Super markets where food has been sitting for weeks with loads of processed and chemical items.
If you want to be a success in this world, just tell people what they want to hear. Otherwise, speak only truth and accept the consequences. "Healthy Food?" Bah, Humbug!
Most people here just dont take the time to make or enjoy things. As one person said, we are often in so much of a hurry to get to the next thing, its a quick meal, and scarfed down on the shovel. Relaxing, taking in the atmosphere and scenery, spending the time with some good friends and family, having quality, fresh ingredients, simply dressed, which are not over prepared and dont need a lot of tweaking with lots of salts and sugars.. well.. theres a lot to be said about those things.
Hi chef, ive been a long time subscriber and i find your videos really inspiering.
Im working as a aprentice at a hotel, going up for diploma in 2 months.
(Our education is 2 years of school + 2 years of practice at a hotel/restaurant of our choice) Just wanted you to know that your entusiasm and love for food, good food, how food should be prepared and treated to accomplish the best results.
Ive tried out lots of your stuff and taken alot of the help with basic skills.
looks like Paris and many countries in Europe are mostly not used with the culture of heavy Sauces, lots of salt, lots of sugar kinds of thing we got going on.
@byLivio Are you kidding? The french invented heavy sauces and highly seasoning food! Look at some of Escoffier's recipies and they are the richest heavyist creations possible. It's all lightened up a lot since the 1970s and neuvelle quisine but still french cooking is some of the heartiest I've come across. Try scandinavia, italy or Japan if you want to see simple light food. Definitely not france! The main difference between french and US is france has the best produce in the world.
@TheDave000 Well,i guess youre right. Perhaps i got the wrong impression last time i went there. It was really the most healthy month of my life, foodwise.hehe
I think the "secret" is in the simplicity and freshness of the ingredients. No matter how fresh a veggies might be in the store, it can't compete with something I just picked from my garden. I don't have to season the things from garden as much as I do veggies from the store. I also think the way food is consumed leisurely may also make it taste better. Here, it's usually in a rush we eat. I know too many who inhale their food. No way they're tasting it.

As Vivian said, fresh ingredients and local products tastes better than something grown 2 timezones away.

Maybe part of the secret to "great food" in any culture is for the diner to have a wide enough palate.
