Yes, training matters, but not as much as it seems. In this fight (choreographed) Nathan stood there taking hits. He couldn't take hits in real life, but he would actually TRY in real life as well (i.e. he could simply pick up Tony and break his back).

If you seen a muay thai fighters shin like buakaw or whatever, they are literally rock blades, a regular person couldn't take one kick vs them, and they kick with their shins, trained on trees.

It seems like you can either have martial artists that do some acting while on set (so not that great of an actor) or actors who do martial arts on set (so not that great of a martial artist). You can rarely, if ever, have both. I think Jet Li, Adrian Paul and Wesley Snipes are among the exceptions.
