I do rabona shot by flicking the right stick right in the arena then I just tab X button and aim to the goal ( I have xbox 360 ) Timing is everything.

kick ball in the air by pushing the left stick forward, then hold in the left stick, while pressing the right stick 3 times

while the player is in the animation of doing the chest flick, flick the right stick right then left... he should then do that air flip-flap without it touching the floor

then just simply hold left trigger (L2) and then do a fake shoot, pulling the left stick in the opposite direction :)
