Hey Mark, nice page. I follow Atkins, I don't know the basics of the Slow carb diet but either way, low carb is the way to go. The reason I write this is because I wanted to tell you: some low carb tortillas don't taste horrible, in fact, the WHITE low carb tortilla from MISSION brand is (depending the size) between 6 and 10 grams of net carbs. And they are fantastic. They are not whole wheat, or anything funny, I don't know how they do them but they are pretty good. Keep the fire burning!

@rhondalees4 - Thanks for the comments. I will try and be more succinct in the future. There is no real "name brand" whole, dried bean that is available all across the country. The closest would by Goya, but each supermarket has a line of dried beans down the same aisle as the dried rices and other legumes...hope that helps!
Great idea to showcase the recipes. Here's a tip, use parchment paper in your fry pan instead of oil, just lay a square of it in the pan. You can use the parchment with butter or oil if you like. If your heat is not higher than mid, you can use a touch of olive for flavour. ( If you go high heat, go for coconut or grapeseed oil as it does not smoke.) I concur, eggs are better when cooked slow over mid heat as you can more easily control the amount of moisture to your liking. Pico is great!
@fuzzybunnies - I am starting to transition over to using cast iron skillets as well. The seasoning process can be a pain though, but thanks for the comments!
I ran across your videos while searching for Tim Ferriss. Love your kitchen! Anyway, I was wondering if you could possibly make videos for us busy mom/dads/business folk that could make a easily frozen/refrigerated meal for breakfast/lunch/dinner that could be heated up in the microwave quickly that would incorporate the beans/veggie/protein matrix and without using dairy.

You made scrambled eggs not an omelet + you used waaaay too much oil/butter for it to be considered "diet food". Otherwise, I fully agree with what you say about microwaving stuff + soaking beans.

Totally agree with your comments about Tim F. breakfast. So unappetizing. Eggs should just not be cooked in a microwave.

Great instruction. Many people don't realize just how quick it can be to use a stove instead of the microwave.
It might be good to show the prep that's done as well (like your Pico de Gallo video).
