@randommfilms Simply leave out the hot stuff and replace with milder spices. A combination of garlic powder and onion powder makes a lovely, non-spicy alternative ;)
I have a noob's question here, since's I'm not all that used to working with an oven. How do you keep the bottom from burning? I saw you using some kind of paper, what is that exaclty?
@altron555 Use baking paper to stop the wedges sticking to the tray. I recommend flipping the wedges over halfway through the cooking process to cook them evenly and avoid burning ;)
I tend to use Olive Oil if I want its characteristic flavor. The rest of time I use Peanut Oil, more neutral in flavor, and which has a smoke point (on the drum label) of 450F/232C. Is your choice for flavor, price or something else?

it so because olive oil doesn't have a very high smoke point so whenever i bake these fries and wedges it smokes up my entire house and get the fire alarm stared do u have any advice for that ?
@fccty1 Actually, Olive Oil has a much higher smoke point than vegetable oil. If you are having that much trouble with it when frying, it sounds like you may have a problem with your stove top. Maybe it's getting too hot. Also, have you tried a different type/brand of oil. This might help :)
@fccty1 Regular olive oil is horrible for cooking with at anything but low temps. You must use Extra light or Pomace Olive Oil or another oil all together. Those are olive oils that you can fry with. Extra Virgin is going to smoke up houses and should be used for only low heat cooking or salads.
Looks good! I'm just curious... it seems to me like your olive oil is a fairly light color. I don't think it is an australia thing because I watch robjnixon and his seems to look like standard olive oil. Is it because your's is light or not extra virgin? I'm just curious lol

Yummy! How do you make your sourcream? In Germany we just have the plain product, without spices or anything. Not like the sourcream from Burger King for example.
@dr1pdr0pz It's not "worst quality" it's the lightest flavoured olive oil. Sometimes you want a bit less of the olive oil flavour and that's when you use light. If you want a stronger olive oil flavour there's no reason you can't use oil from the first pressing.
I normally make my potato wegdes somewhat simpler, using only rosemary and salt, but then again. I normally serve them at barbeques to have along with all the other stuff. I'll give you version a go, as soon as my tastebuds have rested from the ones i made yesterday.

@OnePotChefShow Only Pomace and Light have high smoke points, regular olive oil might be his obvious problem.
Extra Virgin = 375°F/191°C
Pomace = 460°F/238°C
Extra Light = 468°F/242°C
Extra light and pomace do slightly better than the average neutral frying oils which hit 450.
Refined Soybean hits 460/238.
