  • I find it so strange that you don't cook them first .. I haven't tried the recipe yet but I've heard about wedges before but my mum made them differently. She cooked them first like half of the cooking time for mashed potatoes (+/- 10 mins).

    Doesn't the skin of the potato tastes gross?

  • @ThexNaaru There are different ways of cooking wedges, this way is one of the easier ones. If you haven't tried wedges with the skins on, you've been missing out! Give this a go - you'll love it :)

  • @Metsada007 If you wish, but if you use crushed/minced garlic, there will be little lumps of garlic on the wedges. I used garlic powder as it more evenly distributes in the oil mixture ;)

    I made them and I'm eating them now, really delicious. But I've noticed that they taste much better after they cool down for 10 minutes or so, if you eat them immediately out of the oven, they don't taste as good. Just wanted to say :)

  • I have made these twice in the last 10 days, going to make them again for dinner tonight... got the conversion a bit wrong and used about 150ml of oil the first time.. oops! It was better the 2nd time, but 3rd time lucky!

    i've just finished eating my wedges and they were awesome. as usual, yours is a nice and easy recipe that anyone could do.

    the only thing i did differently was add onion powder since i was out of paprika.

    also, i pre-heated my oven right up to about 240c and turned it right down to 190 when i put the wedges in. this gave a nice crispy golden skin and cut down the cooking time by about 10 mins.

  • @randommfilms Simply leave out the hot stuff and replace with milder spices. A combination of garlic powder and onion powder makes a lovely, non-spicy alternative ;)

  • I have a noob's question here, since's I'm not all that used to working with an oven. How do you keep the bottom from burning? I saw you using some kind of paper, what is that exaclty?

  • @altron555 Use baking paper to stop the wedges sticking to the tray. I recommend flipping the wedges over halfway through the cooking process to cook them evenly and avoid burning ;)

    I tend to use Olive Oil if I want its characteristic flavor. The rest of time I use Peanut Oil, more neutral in flavor, and which has a smoke point (on the drum label) of 450F/232C. Is your choice for flavor, price or something else?

  • I used the oil dressing technique on potatoes like you showed and they came out fantastic. I pan fried them for not wanting to put on the oven in this weather and used a totally different spice set and a different cutting style making them almost like thick potato chips.

  • Thank you soo much for the recipie! xD They turned out awesome, Im Indian so we have enough spice in our food, wanted to make something a little more mild, just used some dry basil flakes and dry BBQ seasoning with salt and pepper in the Oil, and repeated as instructed. They were just awesome, I think Im going to keep making them every other day I think xD! /thumbsup

  • it so because olive oil doesn't have a very high smoke point so whenever i bake these fries and wedges it smokes up my entire house and get the fire alarm stared do u have any advice for that ?

  • @fccty1 Actually, Olive Oil has a much higher smoke point than vegetable oil. If you are having that much trouble with it when frying, it sounds like you may have a problem with your stove top. Maybe it's getting too hot. Also, have you tried a different type/brand of oil. This might help :)

  • @OnePotChefShow Only Pomace and Light have high smoke points, regular olive oil might be his obvious problem.

    Extra Virgin = 375°F/191°C

    Pomace = 460°F/238°C

    Extra Light = 468°F/242°C

    Extra light and pomace do slightly better than the average neutral frying oils which hit 450.

    Refined Soybean hits 460/238.

  • @fccty1 Regular olive oil is horrible for cooking with at anything but low temps. You must use Extra light or Pomace Olive Oil or another oil all together. Those are olive oils that you can fry with. Extra Virgin is going to smoke up houses and should be used for only low heat cooking or salads.

  • @fccty1 Instead of olive oil, why don't you try canola oil. It's lighter than vegetable, corn and sunflower oil. :)

  • Looks good! I'm just curious... it seems to me like your olive oil is a fairly light color. I don't think it is an australia thing because I watch robjnixon and his seems to look like standard olive oil. Is it because your's is light or not extra virgin? I'm just curious lol

  • @MrButterworth24 I just used a light olive oil. Nothing expensive or fancy, Regular olive oil has a strong flavour that would drown out the spices ;)

    I'm so glad you did these, every time I've tried to make these or sweet potato fries on my own, I don't cook them long enough or don't put enough oil or something and they come out of the oven still hard.

  • What you can do is use less oil and more spices. Put the mixture and the potatoes in a plastic bag and knot it, then shake the bag. Works like a charm with half of the washing :P

  • @Vorkhan Once the oil mixture is on the potatoes, you can cover them with plastic wrap until you are ready to put them in the oven ;)

  • Yummy! How do you make your sourcream? In Germany we just have the plain product, without spices or anything. Not like the sourcream from Burger King for example.

  • Why use light olive oil? it is the worst a quality olive oil.

  • @dr1pdr0pz It's not "worst quality" it's the lightest flavoured olive oil. Sometimes you want a bit less of the olive oil flavour and that's when you use light. If you want a stronger olive oil flavour there's no reason you can't use oil from the first pressing.

  • I normally make my potato wegdes somewhat simpler, using only rosemary and salt, but then again. I normally serve them at barbeques to have along with all the other stuff. I'll give you version a go, as soon as my tastebuds have rested from the ones i made yesterday.
