Way to extract gelatin.^.^ Speaking on safety, it wouldn't be unwise to heat the gelatin to a gentle simmer (~185 F) for at least 15 seconds to kill bacteria. Also, be cautious of how long you let it be at room temperature. A thermos full of chicken stock sitting in the danger zone (41-135 F) for a good duration of the day can allow bacteria to grow. Heating it up as you need it is the super safe way to go if you're super cautious I am. And if it were me, add some aromatics. Good video.
