Never saw it done that way before, very interesting. I suppose we all learn it differently. I was always taught to cut the tops off about two inches from the beet, wash well and boil skin and all as the beet will bleed out its color out. So don't cut the tip off either. After they are cooked about half way, plunge them in cold water and take off the skins cut , slice. Put in jars and cover with boiling water and salt. Can in canner. Good time to make pickled beets too. Happy canning!
You do NOT cut off the root, it will bleed out the color???
