I feel it'd work much better with at least 6 freely routable LFOs and it suffers for not having any bitcrushing effect ;-)

How about using the steam to spin some turbines which double up as tone wheels? Should give you almost limitless polyphony.

Very clever.... a steam powered oscillator. How are you controller the speed? Have you considered building a bank of such oscillators?
