  • If you cook beef until it's well done you really need to understand that you're an idiot. If you cook Beef beyond medium you're left with some tight fisted horrible chewy and most importantly RUINED piece of beef. All the flavour is pretty much gone. That beef is perfect, it's not red it's pink. Like Chef John said it's on the rarer side of medium rare. Also like top comment says that's juice from the beef from sealing it at the start, it contains all the great beef juices it's not pure blood...

  • Alright, just to clarify.

    That's not blood. It's protein-laden juices colored by the current color of the meat. Notice that all well-done meats have a clear color in their juice. That's not what happens to real blood when you cook it to death. When cooked, blood turns into a reddish gray color and it congeals and becomes thick as opposed to staying thin and clear.

    Got it? Good. Now shut the fuck up about it being "bloody" you ignorant idiots.

  • Why do people come on YouTube videos and complain that rare meat is raw If you don't like rare, then get a cheap cut and cook it to well done. Lean cuts like this shouldn't be cooked to well done since the meat fibers become tough. Conversely, cheap cuts need to be cooked well done to break down the connective tissues.

    And that red juice in the video is not blood because it is 'clear'. You can see the cutting board through it.

  • I don't know why many Americans grow up thinking that meat has to be brown to be done. The buttery savory flavor of a really pink, juicy meat is something I die over every time. I've been eating it all my life and I've never gotten sick from rare meat. If you're the one handling it and you cook it to the proper temperature there really isn't any danger. In restaurants... depends on how you trust the kitchen.

    He says it in the video, but its for cooking it evenly. It's because the beef isn't the same thickness everywhere so tying it up makes it more even, and therefor more easy to get cooked right.

  • @NiTheGod If you intend on making beef tenderloin well done, don't buy one. It's not meant to be eaten well done and will taste awful if it's overcooked. Don't waste your money. I'm not trying to sound mean, I'm just saying it's not worth the investment if it's going to be cooked well done. It ruins the flavor ten fold.

    One of my favorite restaurants has the best appetizers: beef carpaccio. It is (literally) raw beef tenderloin. If you get good meat from a good supplier, eating raw/undercooked meat is safe (not to mention more delicious).

    How can you appreciate the meat if the flavors are cooked away!?

  • @ALLGAM3R It evens out the thickness to make it roast more evenly. Without rolling, the varying thickness of the meat would mean the thinner areas would cook more than the thicker parts.
