The reason he is rude is because customers shouldn't come up to the pass, if a customer complains to the waiter he is always concerned and tries to put t right and even sometimes sends his apologies, but if you come up to the pass you make his job impossible and is not the way you behave so he doesn't behave the way you should either , also they only go up so they can get on camera.

The bigger point is that the costumers are fully aware of the situation that their meal is on the show and it is being made by competing stressed out amateur contestants.
