They look yummy...the only thing I would do different would be to put all the chicken, dressing and apriot preserves in a Cook'n Bag, let it marinate in the fridge, then put the whole thing in a baking dish and bake it in the same bag...much less mess, and the chicken self bases in the Cook'n Bag...I think I'll try this recipe...Thanks!
That looks like the chicken would taste wonderful with sticky rice cooked from my rice cooker. It looks almost like "sticky chicken" with the jam. The chicken on top of sticky rice that would taste and go really nice together. Yummy!

I think this chicken would be good with whipped potatoes, a vegetable that you like, hot rolls, and a little something sweet for dessert. It is a spicy dish, so you don't want to surround it with a lot of other dishes that are spicy in different ways--just go with good, standard starches and veggies.

The temperature is 325 F. It needs to cook slowly to be very tender. The aluminum foil holds the moisture in so that the chicken does not end up dried out and tough. It bakes at the same rate, and you should remove the aluminum foil during the last part of the cooking in order to get the chicken to brown a bit. Thank you! I know you are on a weight loss journey. This recipe can be made with fat free Italian dressing and sugar-free apricot preserves, so that will save some calories. In many of my recipes I substitute fat free items and use Splenda instead of sugar (as long as it does not affect the flavor!). I also have recipes that are very high in calories for those in my audience that don't count calories. My philosophy is that nothing is off limits-just eat small portions of high calorie foods!

This is so great chicken! My hubby and I mix 2 jars of each together and marinade the chicken over night. We found it has a stronger flavor.
