  • @WJMHelena The closest match would be peach preserves, but you could try some other flavors. You need something sweet to go with the spicy flavor of the Italian dressing.

  • It looks good and I'll try it, but an hour and a half sounds like a really long time for tenders even at 325. They don't come out dry at all?

  • @MrGoldenmine No, they aren't dry. I like the flavor when the sauce is baked in like this, but you can leave it for less time, if you like. It will be "done" after 45 minutes or so.

  • This is so great chicken! My hubby and I mix 2 jars of each together and marinade the chicken over night. We found it has a stronger flavor.

  • They look yummy...the only thing I would do different would be to put all the chicken, dressing and apriot preserves in a Cook'n Bag, let it marinate in the fridge, then put the whole thing in a baking dish and bake it in the same bag...much less mess, and the chicken self bases in the Cook'n Bag...I think I'll try this recipe...Thanks!

  • That looks like the chicken would taste wonderful with sticky rice cooked from my rice cooker. It looks almost like "sticky chicken" with the jam. The chicken on top of sticky rice that would taste and go really nice together. Yummy!

  • Hi Betty, Really like this idea. I'm gonna make this tomorrow for dinner. Although - I was wondering if it would be okay to use Apricot/Pineapple Mixed Bottle Jelly. Do you think the pineapple will throw it off? I think Smuckers sales a bottle of Apricot/Pineapple Jelly. I don't wanna try it tho if it will not taste good with the pineapple. Thanks!

  • What do you typically serve with this? I just wanted to say thank you for videos! I love cooking but can never figure out what to make so I browse through your videos til I see something delicious!!

  • I think this chicken would be good with whipped potatoes, a vegetable that you like, hot rolls, and a little something sweet for dessert.  It is a spicy dish, so you don't want to surround it with a lot of other dishes that are spicy in different ways--just go with good, standard starches and veggies.

  • Two questions: first, how do you decide on the temperature? I can never figure that out. Second, what does the aluminum foil do for the food? Does it make it bake faster?

  • The temperature is 325 F. It needs to cook slowly to be very tender. The aluminum foil holds the moisture in so that the chicken does not end up dried out and tough. It bakes at the same rate, and you should remove the aluminum foil during the last part of the cooking in order to get the chicken to brown a bit. You will see the entire recipe if you click "more info."

  • Okay, so I just had to say that this dish is amazing. I ended up making this for dinner tonight and it was delicious!! I used Fat Free Italian dressing and it was great. My husband loved it as well. II served it with rice and steamed broccoli. This will be a keeper for sure. Thank you again for sharing. I can't wait to see more recipes! ;) 5 Stars for sure!!

  • I'm so happy that you liked the chicken recipe, and that you gave me some feedback. I have a coleslaw recipe that would be perfect for you. I think I called it something like Betty's Creamy Shortcut Coleslaw. I also have a wonderful Green Pea Salad that I use when I am watching calories. I could live on it, but it's very healthy!   • Thank you! I know you are on a weight loss journey. This recipe can be made with fat free Italian dressing and sugar-free apricot preserves, so that will save some calories. In many of my recipes I substitute fat free items and use Splenda instead of sugar (as long as it does not affect the flavor!). I also have recipes that are very high in calories for those in my audience that don't count calories. My philosophy is that nothing is off limits-just eat small portions of high calorie foods!
