I like how this guy - unlike most videogame heroes - actually has the brains to pick up all weapons he finds if they are better than his current ones. Others just go "no, can't use that". And the fact that he makes a stop and picks up a better suit of armor every now and then as he sees that the danger is growing.
The Eagle could have been the insignia of the lord/baron/duke of the local castle or even of the Bishop himself since many high members of the clergy also had ties to the nobility. By the Way the fighting style of our sir knight here reminds me of the Witcher
The Eagle as Symbol was very often used in the Medieval ;) Also Poland and many other Countries used them ;) Germans were the Teutonic Order as you said ;)

The guards are germans? (look at the emblem on their shield)
I would think templars would be more akin to the French and English and Germans to the Teutonic Order

Looks the same as the polish one to me ;)
Poland had a white eagle with red background
Prussian a black eagle with some gold and a white background.
