There are some sites like manjula'skitchen.com or the videos uploaded in youtube by them they even don't allow people to add comment which states some disliking or suggestions. They only keep the good comments posted to their video.LOL :)

I love eggplant rolls. We call them Rollatini, if you want to get fancy :-P I just love roasted eggplant. The skin is half the flavor, too! Thank you for doing justice.

@ barodacyril- If you are using olive oil for health purpose try using grapeseed oil as its better than extra virgin olive oil and has high smoking point and i use grapeseed oil for everyday cooking which also includes indian cooking most of the time and doesn't overtake the flavour of the spices i use.The grapeseed oil has a pretty neutral flavour slightly nutty and its also believed that its hgh in vitamin E and lowers bad cholestrol as well.
i use olive oil for my indian cooking and it happens that by the timei heat the oil for my mustard to crackle the oil kinda gets smoky and looses its flavour do u think its wise to put my rawgaram masala ingredients into the jar of my olive oil and let it age for a while would the masala give out its flavour to the oil(osmosis) so that i can drizzile this flavoured oil on my indiandishses after i cook them? advice (am a bachelor who is just into cooking so sorry if my question is a bit weird..
We use canola oil for Indian cooking because it offers the heart healthy benefits of olive oil without the pungent flavor -- exactly the opposite of why you are using it :). This is of course our personal preference, but we feel that the strong flavor of olive oil overtakes the flavor of Indian spices. We've never tried it, but you could possibly warm the olive oil slightly, add your whole spices and keep it in a tightly covered jar. Try a small batch first :).
Look, I'm Italian, so I've been using olive oil almost all my life so far; if your oil gets smoky there may be two reasons:1)you heated it too much,or too quick(you must consider that olive oil burns at lower temperatures comparing to other vegetable oils) 2)you're using a low quality olive oil.
It's me again ! You might want to mention that egg plant holds no nutrional value at all. I might be wrong about that but I did read that somewhere. I guess it's like a sponge,you have to add nutritional ingredients to it. It's like a vehicle for other ingredients.I also think it's in the berry family of plant ?

Ricotta cheese works really well because it does not melt. The only other option we can think of is paneer.

What I do is buy a container of "cottage" cheese, it doesn't matter what size the curd is, and puree it in a blender.
It acts just like the ricotta cheese in recipes. I use it in Lasagna also.

This a very good recipe but may be the salt could be skipped in the filling as it became too salty cause of all the salt in eggplant
