I wish someone would do a full version of the chant that sounds like this. I tried to find one but they are either not a capella or they are sung with super high voices. Nothing this epic.
It's taken from Roamn Catholic 'Missa pro defunctis' (Latin, "Mass for the deceased") and/or 'Missa defunctorum' ("Mass of the deceased") also known as The Black mass, which is how The Roman Catholic Church celebrates for the repose of the soul of a particular deceased person or persons. It is frequently, but not always, celebrated in the context of a funeral. It translates to "Kind Lord Jesus, Grant Them Rest" so go with it from there. It's a Gallican Chant, which preceded Gregorian chant.
If you've watched the whole part, you should notice that you most likely hear it because one of the monks begins to stumble from hitting himself too hard. I Vulcan love this movie!!!!
I thought that "dona eis requiem" meant "grant us peace"? Anyway, this part is always fun to watch, although, I wouldn't advise it if you've got a headache already prior to watching.
well, im sure you are right. if you are, the reason they do that is because the monks would inflict pain upon themselves to be taken more seriously when asking for forgiveness. this is monty python just making it funny (like always)
Just an interesting (useless) piece of information:
I'm not entirely sure, but I tried to translate this to english using a Latin-English dictionary, and I think it means something like "Holy/Godly Master Jesus, Give us Rest/Piece".

@Landrew0 some religious people believe doing that drives of evil demons or something, apparently. I read it in a book years ago so i can't remember.

The correct translation of Pie in this context is Kind/Merciful not sweet so it's:
Kind/merciful lord jesus, grant them rest

This is not done anymore.
It has been banned, when those who hated each other started to hit on each other heads.
They had many casualties.
They're ramming two wooden boards together now ... (They still have some casualties)

Correction:
It actually means "Blessed/Holy Lord Jesus, grant them rest!"
Es bedeutet eigentlich "Heliger Herr Jesus, shenke ihnen Ruh/Frieden!"
