I would advise against high temps, as the seasoning will begin to burn before the chicken is done. I would suggest your max be 340 degrees for 17 min according to the size of your chicken pieces.
RC don't be turned of if you don't have a deep fryer, it can be fried on top of the stove with a heavy pot. Only you must regulate the temp of your oil constantly. Meaning 350 degrees is perfect for frying chicken on top of the stove. Only after you drop your chicken it lowers the temp of the oil so you must turn the stove up, once you get the oil back at 350 you must turn it back down so the chicken don't burn. You feel me!!
So you got to keep this process up for about 15 -20 min. The Deep Fryer does this automatically in 15 -- 17 min, your just waiting for your chicken with some hot sauce!!! lol

the recipe is posted on his site listed to the right. It's basically a brine. Salted water, with the seasonings he had on the counter.

I used all purpose flour and yes I would re-flour before putting into the hot oil.
