I wonder how long that can last before "spoiling" to the point of being inedible... How much was the slice in this video by the way? $200 dollars??? Surely the more aged it is the more expensive it'll be.

This cheese will last for a long time as it is already dry and aged. That peice is approximately $60 or $70, a little less than your $200 guess :)
