Mr. Park is a true conoisseur of Japanese Kaiseki cuisine and its art. I think he knows it more than most Japanese people. I'm Japanese too. Of course, the chef is from Kyoto who has mastered the Kaiseki cuisine as well. Also, he speaks Japanese very well that I thought he was Japanese. I'm sorry that some people just can't get over it and throw nonsense without knowing the truth.
The restaurateur is Korean who went to Univ and worked in Japan and is an afficionado of fine Japanese dining. His head chef is a top chef from Kyoto. Besides, being a Korean or not to make best Japanese food is moot point bec in Tokyo some of best Italian dishes I had was prepared by non-Italian Japanese.
Awesome authentic Kaiseki gastronomy. Had a fantastic food there. Everything is as said on the video. Excellent food, freshest sushi, and really cool ambiance.
Just have to be able to chill out and dine for 3 hrs to enjoy all the courses.
