Katsudon is one of my favorite Japanese dish. But because I don't like onions much, could I use something else as a substitute? If so, what can I use instead? :)
Hi, it's a random question unrelated to Katsudon...but would you tell me who sang "Human Nature"? the background music of this video...i really like it and i'd like to know who the artist is. thankssss
@kimriya In my opinion, you could actually use pancake syrup in place of the mirin. It is a similar consistency, so it should give the shine and sweetness. However, it is of course a bit sweeter than mirin, and has a distinct flavor, so I wouldn't recommend doing that for large recipes, at least not much, because the flavor of the syrup might stand out too much. But in something like this that uses only two teaspoons, it should be fine... Just my thought.
I just ate it a few hours ago, and I love it! I do it a little different though. I let the pork fry a little more, it turns darker but still tastes incredible (soft, not crunchy!). Also, I add the tonkatsu to the dashi/shoyu/mirin mixture right after the onions. It absorbs the flavour and tastes like heaven ^^

Interesting that you didn't cook the tonkatsu with the egg mixture first. What a great personal touch to the recipe - and the tonkatsu will stay crispy as well! Thank you

@kimriya mirin is to give a slight rich taste and shine. so you can skip ;) not a big change.
