I love the ways you reduce the fat content in your recipies. I love indian food but it tends to be very calorific. I made the zucchini dish with coriander and lime, it was delicious!
It's funny that you recommend retaining the soaking water. I've always thought that changing the water frequently while soaking keeps gas problems at bay.
Using asofoetida (hing) helps with the gas problem. The soaked water really adds to the flavor of this dish. However, if you still experience this problem, you can definitley use fresh water.

Absolutely! You don't have to cook them as long since the canned beans are pre-cooked.
