Technically you are right. But in practice it works 90% like constant speed: Throttle controls the power delivered to the prop, and ch-8 know sets the rpm. The pitch is not adjusting itself when prop is unloading in the air, so this part is a miss - however in the real life it will my be no big difference. Replacing TX mixers with on-board power controller will change this setup to true "constant speed". One day maybe ... :-))
Well technically it's not a "constant speed" propeller. A constant speed prop would be able to self adjust the pitch for altitude and flight attitude within a certain range depending on the position of the prop rpm control. This is more of a "variable pitch" or "adjustable pitch" system. Really cool work though! I was just thinking the other day how someone would do this with an electric RC plane. Great job, man.
