I have the DVD and I listened to this several times and he definately says "where you been" not "where have you been". It's not that uncommon to leave out the "have", don't you think?
I'm not sure about that.. It's almost the same as someone saying "I seen it!" Where, "I've seen it" or "I have seen it" would be more correct. "Where you been" kind of sounds like back-woods. Couldn't it be "Where you have been?"
I think people do say "I seen it", informally. It's like people in New York saying "how you doin?" instead of "how are you doing?" (If they actually say that.) I don't think dropping a word here and there in informal speech causes much confusion. It sounds friendly to me.

By the way.. Shouldn't it have been "Where've you been all morning?" Instead of "Where you been all moring?"
