    When I use pressure cooker, I hear about 5 whistles, depend how is my ginger, if I am able to find young ginger, I hear about 3 whistles only...5 whistles mean about 8min

  • i have watched all the videos on youtube on how to make this and so far yours is the best and easiest to follow. except for the pressure cooker i hate cooking with one. ..

    i am still a little intimidated to cook this but i will try it one of these days ..

    If you don't want to use pressure cooker, cook in the open pot till ginger is very tender soft. Then only add to thick sugar syrup.

  • I fear i did not follow properly but whatever it was bad to have :$.

    I boiled ginger slices in water just to cover the the veggie. As soon as water dried up, i placed the ginger slices in sugar mixture .

    The result was disgusting. No one could tell that as a candy .. that was like raw ginger

    You have to boil ginger till it is soft, tender. Sugar syrup must be crystle enough to make candid ginger.

    The best thing is to use pressure cooker to boil your ginger fisrt. It takes only 5 mintues in pressure cooker to make your ginger tender/soft. I can make this candy ginger in about 15 minutes only....by the time ginger gets boiled, I prepare thick sugar syrup and then soak all my boiled ginger in sugar syrup and then roll them into again granulated sugar to give kind of candy texutre...

    Did you find it hot? Then you must have got fresh, great ginger. When I make, I want hot but it is not that hot but I usually prepare cookies with this ginger so it is okay for me if it is not hot....

    The only reason is that your syrup must be liquidy and not sort of thick candied...very simple recipe so you can't go wrong....just try to focus on sugar syrup.

And if it is not available in the market how can we prepare that at home. It will be more helpful if u upload video of preparing tamarind candy.

    Tamarind paste can be prepared at home or can be bought ready. Make sure that the paste is thick enough meaning nothing else is added to it. I will try to show. Enjoy!

    Very easy recipe

    1/2 cup tamarind pulp paste

    1 cup white sugar or 1 cup brown sugar

    Mix the tamarind flesh(paste) with the sugar, and roll into a smooth ball, about 3/4 inch in diameter, with a tamarind seed in the center. Roll the ball in granulated sugar, and store in an airtight container.

    you can spice it up with garlic and black pepper powder and also cayenne pepper can be added to paste.

    Yes, it makes big difference between raw ginger and this candied ginger...I really love double ginger cookie(video is coming soon) with tea, healthiest cookie ever...made with wheat and molases! Keep enjoying.
