  • Here's how I make sweet tea:

    4 bags Constant Comment black tea

    1/2 cup sugar

    coffeemaker

    Put tea bags in coffeemaker strainer and add 8 cups cold water to reservoir.

    When done brewing fill pitcher with sugar and hot tea, stir and add ice. Makes 1/2 gallon.

    As some have said using boiling water(212 F) makes the tea bitter, coffemakers brew at 165 F.

  • since you mention tannin extraction... to minimize, the water should NOT be over 180F or so.

  • OMG I followed your advice and Damn It came out great :) Thanks for the advice on saying what happens when you steep the tea to long. That was my problem. but now It came out great.

  • i steep my tea overnight, never bitter. bitter is from water that is too hot, the tannins are leached out into the water around 180-190 degrees. this applies to coffee also. i boil a quart or so of water, take the heat off, add tea, let it set overnight, dilute with about another quart of fresh water. blend in my pitcher, then refrigerate. add sugar if you must i prefer unsweetened.

  • As a southerner(Texan) who grew up drinking extremely sweet tea, I use less these days for health reasons.

    Too much sugar will make you tired after it wears off.

    These days I use green tea also, haha.

  • I love sweet tea. I use about one cup of sugar to a gallon of tea. I never boil a gallon of water. I boil about a cup and a half of water with my tea bag, and add the rest of the water and sugar after the fact.

  • Damn, wen i make my sweet tea, i make one gallon using 10 small tea bags and i let the tea seep in for like 2-3 hours to get a great tea flavor. As for the sugar, i put in at least 1.5 cups into that gallon.

    U would hate my sweet tea but it taste amazing. If u drink a cup after 7pm, b prepared to stay up all nite...its that strong

  • I will drink an authentic glass of southern tea about once a year but that's it. This recipe is for people with healthy eating habits. I just won't put a pound of sugar in anything, period.

    My doctor says no sugar is good, not even sometimes. If I get a craving and make a recipe I always put half the amount of sugar requested and it comes out great. Most recipes ask for TOO much.

  • yeah im from florida and we put a pound of sugar per gallon of tea.

  • This is fake Yankee sweet tea. And southerners don't boil the full half gallon of water to the tea isn't true. We make it concentrated and add the cold water later, too. Rooibos? Only 2 tbsp of sugar? Lemon? Blaspheme!

    Keith, here's how to prevent the tea from becoming bitter from over-steeping. When you add your tea bag to the hot water, add a BIG pinch of baking soda to it. Doesn't affect the flavor, even if it steeps for 20 minutes, it won't be bitter. A big pinch, Keith. Try it.

  • @wheresmylife I agree with you! Blasphemy! LOL! I was gonna mention the baking soda. If Chef Snow was from the South, he would have known about the baking soda... His Southern roomies are holding out on him. I guess that I will make a video soon of how I make sweet tea and post it on YouTube... By the way... I use 1/2 cup of sugar per quart of tea... 2 tablespoons of sugar for 2 quarts??? That is still unsweet tea in my book... :) Anyway, good video Chef Snow!
