He's saying that though it might educate you on the cookery techniques, it doesn't prepare you for actually working in the industry where to an extent, you learn as you go, when you're doing a type of prep work, odds are you're doing a lot of it so you can get good at it in a way you just couldn't with catering college. I can say from personal experience he's very right. It's one thing to be demonstrated a technique and follow it once, it's another to spend half a night at it.

I think the first few months were beneficial with basic knife skills, butchery, food safety and hygeine and maybe some of my later lessons about pastry. Other than that though, I think I should've bitten the bullet and just gone into an apprenticeship. Much of what I learned there though I would've learned better in the workplace where I would be doing it enough to actually get very good at it and there is much to learn that catering college just doesn't teach you.

However saying that MPW is a chef I hold with high respect, him, Floyd, Stein, Roux(s) and the chefs i've learned and worked with I do also.

just because you read about El Bulli in a magazine article doesnt mean that it's representative of Spanish cuisine. The food is overpriced, under developed, usually cooked once in the morning and allowed to sit until someone orders it at which point its' microwaved back to life. Most dishes that are source of pride for spaniards are rice based casseroles like Paellas, Arrozes de banda, Arroz negra and so on.
you my little friend have obviously not travel much, I know you have never been to Spain so don't knock it until you've tried it. if you ask many of the top chefs or people who are in the food scene they'll tell you Spain is "the place" outside of Asia when it comes to food. It's where all the progress and excitement happens in cooking. Do some search and look it up.

That chef I worked for in one of his restaurants in Holland park....A world between what he says ...how the chefs in his restaurants...those are TV chefs....He is never in his restaurant...I was given the job...but I turned it down...though I live next door to his Holland park The Belvedere....I was disappointed. ..

Catering College is the UK version of Culinary School here in the states. Also, Master Chef is not just a title for a great chef. It is a certification that requires passing a rigorous week-long test at the Culinary Institute of America. Marco Pierre White has not passed this test. He is above it. In my opinion he is one of the greatest chefs that has ever stepped foot behind a stove.
As tough as MPW is, you can tell he's become a better man just from the fact he admitted to making mistakes in the past and can even see that change in effect by the way he treats the crew on HK... Much respect to the tthe master chef.

This is the guy that schooled Gordon Ramsay and a few other top chef's (not necessarily of TV fame but restaurant fame).
He achieved 3 michelin stars at age 33, the guy's a fucking legend in the kitchen and pretty much the god-father of british cooking.
Ramsay's awesome, although he has become somewhat of a brand name nowadays.

Marco gives himself such hubris, but he knows, EVERY fucking day he wakes up and puts on his chefs whites, that a man, Gordon Ramsey, whom he asked to take over his 3 star resturant, who wanted to make his own 3 stars, will forever more be better than him in SOOOOO many ways. Gordon is not great!! Fuck me Libby 'cause a michelin star chef can't just be average. If you listen to Gordon Ramsay you'll see the passion and clear explaination. Plus Gordon is making a great job by making shows where he show the real side of cooking and one of the most important thing in cooking it's your determination. Even if you have a nice palet and a great passion for food you need a fucking good pair of bullocks. people should show more respect for these chefs who work their asses off.

i think u misunderstood me.. he's very passionate and i admire him as one of the best chef in the world. but i don't consider him great because he does a lot damages to this industry. i have my respect for him but again.. personally i don't like him being so fake on the tv cause i know him and he's also a good friend and chef to my brother.

Catering College is the UK version of Culinary School here in the states. Also, Master Chef is not just a title for a great chef. It is a certification that requires passing a rigorous week-long test at the Culinary Institute of America. Marco Pierre White has not passed this test. He is above it. In my opinion he is one of the greatest chefs that has ever stepped foot behind a stove.
