  • Ramsay's a total sell out. In the early years he slagged off Ready Steady Cook, TV Chefs, Lloyd Grossman sauces etc. Just look at him now, scrambling around for fame, getting hair replacements, botox, endorsing supermarket foods..

    He's saying that though it might educate you on the cookery techniques, it doesn't prepare you for actually working in the industry where to an extent, you learn as you go, when you're doing a type of prep work, odds are you're doing a lot of it so you can get good at it in a way you just couldn't with catering college. I can say from personal experience he's very right. It's one thing to be demonstrated a technique and follow it once, it's another to spend half a night at it.

You put your own signature on it once your trained whether your an electrician, plumber while your learning you do it the chefs way period is that right? But I was just saying you haven't wasted your time with college still got you prepared for what was ahead with the skills side?

    I think the first few months were beneficial with basic knife skills, butchery, food safety and hygeine and maybe some of my later lessons about pastry. Other than that though, I think I should've bitten the bullet and just gone into an apprenticeship. Much of what I learned there though I would've learned better in the workplace where I would be doing it enough to actually get very good at it and there is much to learn that catering college just doesn't teach you.

    Haha, I get what you mean. So do catering colleges here, but with all the students, it tends to be far overstaffed compared to the real workplace so the experience is not usually meaningful. That was my experience anyway, the pressure just isn't there.

  • @InnuendoXP Yeah but you can't blame the college remember no offence most americans want to be famous like ramsey so if something is popular they'll do it. Over here it's a job you wanna be a big celebrity chef you need to be good at your job if that makes sense? But my point is thats probably why it's over crowded that college does it in shifts the students have to do it! To show dedication or piss off in other words. So where do you work now? in catering or a restaraunt? Wish I did catering :(

  • I'm quite guilty for going to catering college full time, however I do agree a lot of people when they will leave college will be in for such a shock because they haven't looked really at what they are getting into. However saying that MPW is a chef I hold with high respect, him, Floyd, Stein, Roux(s) and the chefs i've learned and worked with I do also.

    Tortilla de Patata which is a potato omelette comes to mind, nice but not exactly the place where progress happens. Would you pay 6-8 euros for a plate of microwaved rice, chicken and rabbit??

  • just because you read about El Bulli in a magazine article doesnt mean that it's representative of Spanish cuisine. The food is overpriced, under developed, usually cooked once in the morning and allowed to sit until someone orders it at which point its' microwaved back to life. Most dishes that are source of pride for spaniards are rice based casseroles like Paellas, Arrozes de banda, Arroz negra and so on.

  • This is the guy that schooled Gordon Ramsay and a few other top chef's (not necessarily of TV fame but restaurant fame).

    He achieved 3 michelin stars at age 33, the guy's a fucking legend in the kitchen and pretty much the god-father of british cooking.

    Ramsay's awesome, although he has become somewhat of a brand name nowadays.

    def rite about catering college- it used to bore me to tears after spending the week with 2 star michelin chef and then learn how to fry off veal bones or make kidney soup! but they said i needed the 'qualification' AND you know in 20 years of being a chef and cooking for the rich and famous , no employer ever asked to see proof of my 706 1&2.....

  • it's funny how he mentions "snobbery" toward the people in the food service industry. he used to have a similar attitude about the people eating his food (20 years ago), saying that they had no real idea or appreciation for the food that they were served with. i'm sure the years have softened those edges though

  • Catering College is the UK version of Culinary School here in the states. Also, Master Chef is not just a title for a great chef. It is a certification that requires passing a rigorous week-long test at the Culinary Institute of America. Marco Pierre White has not passed this test. He is above it. In my opinion he is one of the greatest chefs that has ever stepped foot behind a stove.
