You probably could delete the coolers if it was for off road use or in a non emission state. In a manufactures shop, we go back with original to keep within federal guidelines.
In the simplest terms, it cools the fuel. On the 6.4 liter, the fuel pressure is increased in the high pressure fuel pump. The heats the fuel. It returns to the fuel cooler to cool the fuel. The fuel cooler is a liquid to liquid heat exchanger that reduces the fuel temp to ambient temp or better.

Would it just be better to just delete the EGR and RR the Thermostat and Radiator? EGRs have been a fali since the 6.0
