if you go into multiplayer..first of all what can you do? (gamemodes?)

and second..can you just choose any plane? so i can play with a fighter jet and others with commercial airliners?

Can you save replays on FSX and then record them or do you have to record while playing?

You can save replays but there is also a program called FsRecorder which has the feature of playing back time and recording!
