  • I put some big catfish fillets on my wood smoker grill along with some whole mild red and yellow peppers. The sweet variety that didnt have as much heat. I put them in there with some country style ribs. basically baby roasts about 2 inches thick. I used McCormicks Montreal Chicken seasoning mix on everything. Worked out out great. Leave the fish in there until you think it has enough smoke. I took it out after 30 minutes

  • the trick to marinating or like this in buttermilk, catfish with buttermilk always, to pat dry off the fish and once added to whatever liquid it needs to bathe in, freeze it till JUST solid. let it defrost for like 10 mins, itll be easy because its basically just hit 32 when you froze it so all warming is immediately latent heat. repeat freezing step and defrost until just a little under room temp.

  • Hey Dave, You fry the fish just like my mother does, I fry mine in a deep fryer but I don't use the milk I just coat the fish in seasoned corn meal and deep fry them. Looks just like when mama made it! Take Care!

  • ever tried ur own catch? that way you are able to leave the back tail fin and cook it. (some like all the fins) not good for kids though. where the fin is delicious fried up you cant bite too far or it is bone.

  • some facilities will pay you for the oil. it is used for biodiesel......you know you can do it yourself with the oil.

  • I never dispose of it down the drain.

    I just wait until it cools and pour them in tripled shopping bags.

    Then I toss it in the trash.

    I just feel uncomfortable about pouring this stuff into our oceans.

  • Sure, as long as it is white and flakey. I would not cook tune or salmon, but it is great with cod.

  • @chAL111777 -- A basic light cornmeal batter works well not only for catfish, but also clam strips, bluegill/sunfish, bass, perch, cod... the list goes on and on. Trout is delicate in flavor and texture, so I recommend no batter, quick cooking at lower temps, not much spice. Tuna and salmon as noted are heavy in oil and flavor, and don't do that well with batter.

  • My mama made some fried catfish tonight and it was GOOD. A friend of my daddy's caught them out of Kentucky Lake today, so It looked good...tasted good...we knew it was gonna be goood. lol. I'd luv 2 see how you make hush puppies. Are you for or against onions in hush puppies? Hush puppies with green onions in them are gooood. My mama makes good cole slaw. She makes the dressing with salad dressing, sugar, salt, pepper, celery seed & bread n butter pickle juice..that's the secret. It's goooood.

  • I just cooked some catfish nuggets, hush puppoes, and crockpot spagehtti...yummy it was good. That putting milk on the catfish helps the cornmeal stick just right. Y'all better try it. Dave knows what he's talking about.

  • I work at a Thai restaurant, and I'd be inclined to agree. Even just fried rice is more flavorful than the fried rice at Chinese restaurants (although, I suspect the rice at the Chinese restaurants here is actually American rice).
