it's really 'all i do is smoke cheese.' It's about weezy's craft fish smokery that was almost put out of business when an industrial fish smoking plant opened up in the local area. He saved the business by turning his attentions to fine smoked cheeses, but with the market saturated by lower price smoked fish, this became the sole focus of his business. Hence, all he does is smoke cheese.
