When you start studying different kinds of cheeses, it's easy to see how and why they're made. Ricotta was just another example of not wasting anything. It's very sad to see that generation of people disappearing. My grandmother was that way, and passed away last year at 97. Every 3rd night or so, she mix up a batch of her buttermilk the old fashioned way.
you keep the whey overnight....in the fridge??? I know it sounds silly, but I also know cheese is left out to age so I really need clarification please.
Cool video I have dairy goats and have made cheese a couple of times.. I just threw the whey to my dogs... They will have to wait a little longer next time..
one tip add some white vinegar about 2 oz for 2 galon of whey and you wil get nicer ricotta, its gonna get a bit chunkier then whay you have now. my father in law just made cheese and ricotta from 45 galon of milk :D
