You can't just say that "I'm well" is an abbreviated greeting that just leaves out "doing." What kind of explanation is that? Who ever said that "doing" was just assumed to be there? You can't! Plus, it doesn't explain why "I'm good" is inherently incorrect, at least in your eyes.
