i like stir fry but i am starting to be more concenred now about the amount of oil. I am trying to stop frying food. YOU can actually stir fry using water instead i have tried it
@AsianCookingmadeEasy only use about a tablespoon at a time. Use hot water from a kettle. Get the timeings right with stuff that is sticky like chicken breast. Experiment with the amount of salt or soy sauce used also as using water waters the salt down but it evaporates very quickly
I once cooked and ate the legs and shells it was my first time cooking stir fried with shrimps, one of the reason's why I now watch videos on Youtube now before cooking anything I'm not really much of a chef lol =P
@virgoqueen27 Yes - you can just add them in at the end. There will be a slight difference in flavor and texture from skipping the marinade, but It will still make a tasty dish :)

@kido4gab The shrimp in this recipe should have a bit of a crunch (just slightly) from the cornstarch coating; however they should not be tough. If they come out tough then it means they are over cooked. And the salt you can simply adjust. Here I use a teaspoon in the marinade, but depending on your tastes you can simply cut this in half or cut it out completely if you wish. I hope this helps answer your questions. I live in Poland Europe and the only one (frozen or not) srimps always has white-pink colour. I'm wondering about if it has other taste...
@klimasisko If they are pink that usually means that they are already cooked. Raw shrimp are white and grey in color (I guess it comes out a bit brown on the video.) But look to see if it says that they are cooked - that is probably why they are pink :)
do you make the chicken broth or do you buy it? and how do you store it. It seems a bit complicated to make the chicken stock (broth?) from tablets and then cool them (as they will not dissolve in cold/room temperature water) before mixing to make a sauce. Do you know any other way to make and keep it for sometime?
@hidimb I've actually been using organic chicken broth that comes in a carton from a store here called Earthfare. You can usually find similar broth in the grocery store too - I think Swansons makes a pretty good one as well :)

Also, I would simmer the shrimp shells in the chicken broth for about 10 min, strain the broth well and proceed as usual. This adds extra dimension to the flavor of the sauce. Just some ideas!

Question: After watching this video last month I decided to do it myself.
There has been ONE and MAIN problem with my cook. The shrimps, after they were cooked were really hard to bite and tasted a bit salty.
I always eat all sort of shrimps at Chinese restaurents, and they are very soft to bite and taste very nice.
Can you tell me if I need to do something with the shrimps before cooking them?

You can use any oil with a high smoke point - vegetable oil would work just as well :)
