I would recommend using radius balls for filleting. You can call Composites One, etc. The tongue depressors work, too but, I find it easier to use the balls.
I have so far, but the 12ft Granville Bay I'm working on now, I might just use a thicker fillet seam, and no glass tape. The tape adds more stiffness to the hull, which is a plus when sailing it.

So do you fiberglass tape all of the seat seams including the seam connected to the hull?
