He doesn't need to prove how deep his voice is, this song has not longing in it with the key change; which is the reason why I loved this song in the first place.

I don't think he's doing it to prove how deep his voice is. Consider how long they're touring/performing, his voice is simply gonna wear out and it's hard to match the high pitch of the studio version. It prolly took several takes to get the album version right; here, if he screws up, it's pretty noticeable, so he went the safe route.
