If you want to do a terriyaki marinade, mix equal parts soy sauce and white sugar, then add about two Tbsp chopped garlic and two Tbsp chopped fresh ginger. Let the meat marinade overnight, and grill.
(My mother in law is japanese, and she taught me this recipe.)
Is it safe to marinate for around 24 hours? I had planned to make it for my hard working wife (auditor) but she already ate. I already put the meat in the marinade, so just curious if that will cause any issues?

@steveboomhour i agree totally ... water isnt your friend here ... oils dont dissolve in water ... but they do mix with other oils , since what you are working with here is all oils ...water would at best emulsify and more likely split out and enter the meat keeping the flavour oils out ... good point
Me mexican i qualify as an expert here... j/k but seriously try this... marinade the fajitas for an two hours in bud light then put some good lemon pepper on it... I use the adams brand... cook well done... trust me and enjoy...

I am an American living in the Philippines and I love to make fajitas but am somewhat contrained by the availability of ingredients. Even so I have had good results using Cane Vinegar and Calamansi Juice in lieu of lemon juice. Thanks for your videos, they certainly are informative.
These are marinated for about 1 hour in the refrigerator. I prefer the red wine vinegar, so I can't tell you how it would taste with plain. It might be worth it to go buy the red wine vinegar. It's nice in a variety of dishes and vinaigrettes. Cheers! Jason
As a stoner who watches your videos I must say you always show the cooking and adding the meat. If you're gonna make marinade sauce you should show your meat cooking as well.

Ahh they were awesome. I was letting the marinade rest for half an hour like you said, upstairs in the kitchen. And my wife came home and said it smells good. And I hadn't even started cooking yet.
We even reused the marinade overnight on some chicken for stirfry the next day :)

You can use lime juice in place of the orange if you prefer. I think this will make enough to cover more than one pound of meat. You can always double the ingredients to make more.
Throw out any left over marinade that was used to marinade raw meat. If you have marinade left over that was not used, you can keep that in the refrigerator for a week, or freeze it for up to 6 months.

Best fajita marinade I've found. I like to do a quarter cup of water or even omit the water entirely. I also add about a half shot of tequila. :)
