He wiped it off with a paper towel ive seen worse in los angeles and new york restaurants and stands, and the reason alot of food vendors dont wear gloves, atleast where i go Atoyac, Jalisco, is because the food vendors arent there specifically for tourist they are there to sell food to people they see in a daily basis that like their food, if you went to a friends house for dinner would you ask if they if the cook wore gloves or a hair net? Its essentially the same.
