  • I am considering buying your video but I am interested in a natural doughnut made with butter rather than shortning and fried in peanut oil rather than shortning. Is this possible with your recipes?

    The filtering powder is only used with a filter machine, right?

    Unfortunately, i don't have a filtering machine. I use the old school cone filters.

    I guess i need to invest in a filtering machine. I'm not even sure i've ever seen one that works for my size fryer. I have a 34 x 24. A couple of donut shop owners told me that they never use a filtering machine because they are more trouble than they are worth. I've never used one so i don't know.

  • @pantysnatcher70 Yes the filtering powder is only used with a filter machine. It is critical to filter the oil at least monthly and clean th fryer well every 6 months or so...

  • • When you filter fryer shortening oil use Filter Powder to extract impurities that contribute to the bad taste, smell and foaming of fryer oil. Use a shortening that is hard at room tempature and filter shrtening weekly depending on the volume of donuts made.

  • Hi Ed,

    i'm experiencing a problem that noone so far can tell me how to remedy.

    About every two weeks my donut frying oil starts foaming. It starts out with

    minimal foam just around the parameter of the donut and within a few days,

    it is foaming up through the hole and over the top of the donut which causes

    an indention in the donut where the foam runs over.

    I use a premium donut fry, Saf instant yeast, and a premium donut mix.

    I also use reg. tap water for the dough and the proofer.

    Any ideas?

  • @espi005 Hi Joe. Thank you for the kind words. In 1988 my uncle and I opened the very first donut shop in Mexico, in the city of Ensenada . We lived with the donut shop owner and his family for 5 weeks. A very memorable experience.

  • Here's a useful question: What's involved in maintenance of the equipment and daily cleanup? Particularly with the vats of sticky ingredients and I assume there must be grease traps as well, correct?

  • do you add urine to the batter? the yeast in the urine helps activate the starch to produce fluffy donuts.

  • @spacebunny83 I offer vegan, baked and gluten free donuts to, and of course traditional, unique and lost to history donuts. In all honesty muffins contain about the same amount of oil as donuts. We all must eat in moderation when enjoying comfort foods.

    I'm opening a donut shop in a few weeks. I was wondering where you got the handles for your screens. I can't tell from the video if they are bolt ons or a cradle. I've been looking for some like those. Thanks

  • @pantysnatcher70 The basic cradle I got from Ebay and had the cradel fabucated to drop down to the sides, so... the belhaw can clear the handles of the cradle. .

  • The donut course contains not only how-to make traditional, unique and lost to history donuts but also included; equipment lists, recommended pricing, donut shop layouts and floor plans with recommended equipment fabrication and exhaust hood and fire suppression mechanical plans for the installation. The DVDS are not choppy, just when I edit. lol
