I am considering buying your video but I am interested in a natural doughnut made with butter rather than shortning and fried in peanut oil rather than shortning. Is this possible with your recipes?
The filtering powder is only used with a filter machine, right?

Here's a useful question: What's involved in maintenance of the equipment and daily cleanup? Particularly with the vats of sticky ingredients and I assume there must be grease traps as well, correct?

The DVDS are not choppy, just when I edit. lol

Hi Ed,
i'm experiencing a problem that noone so far can tell me how to remedy.
About every two weeks my donut frying oil starts foaming. It starts out with
minimal foam just around the parameter of the donut and within a few days,
it is foaming up through the hole and over the top of the donut which causes
an indention in the donut where the foam runs over.
I use a premium donut fry, Saf instant yeast, and a premium donut mix.
I also use reg. tap water for the dough and the proofer.
Any ideas?

do you add urine to the batter? the yeast in the urine helps activate the starch to produce fluffy donuts.
